KUEY TIAW SUP

3 ulas bawang putih - cincang
5 batang cili padi - cincang
1 sudu besar minyak bijan
1/2 kiub stok ayam
fishball
ayam
daging
1 sudu teh lada hitam
lada putih

1. Tumis bawang putih dan cili padi dalam minyak yang telah dipanaskan ( minyak bijan & minyak masak )
2. Setelah garing, masukkan ayam dan daging. Gaul sehingga rata. 
3. Masukkan lada hitam. Gaul lagi sehingga rata.
4. Masukkan air secukup rasa. Bergantung ikut banyak kuey tiaw.
5. Biarkan sehingga daging dan ayam empuk
6. Masukkan kiub ayam dan lada putih secukup rasa
7. Masukkan fishball dan biarkan sehingga mendidih
8. Jika suka boleh lah dimasukkan sayur sayuran seperti sawi atau chinese leaf.
9. Bolehlah dihidangkan dgn daun bawang
10. Jika suka kueytiaw sup ini sedap dimakan dgn cili jeruk dan perahan limau.

AYAM MASAK KICAP


1/2 biji bawang besar
3 ulas bawang putih
2 inci halia
1 sudu teh serbuk cili
cili hijau/cili padi
1/2 cawan sweet chili sauce
2 sudu besar oyster sauce
kicap

1. Goreng ayam yang telah digaulkan dengan kunyit dan garam separuh masak
2. Tumis bawang besar, bawang putih & halia yang dikisar halus
3. Setelah garing, masukkan 1 sudu teh serbuk cili. Gaul lagi sehingga garing
4. Masukkan sweet chili sauce dan oyster sauce. Gaul rata
5. Masukkan ayam.
6. Masukkan kicap secukup rasa.
7. Sekiranya suka pedas, masukkan cili hijau atau cili padi yang dibelah 2. Boleh juga masukkan bawang besar yang dipotong bulat.
8. Biarkan sebentar sehingga bawang dan cili layu baru diangkat.


INSTANT CURRY PUFF


I used this for the pastry.

Cut each of the frozen paratha into 2 pieces and fold it into three to make a triangle shape.
For the filling :
1. Tumis bawang besar & bawang putih
2. Setelah garing, masukkan 2 sudu besar rempah kari daging yang telah digaul dgn air utk dijadikan pes. 
3. Masukkan daun kari
4. Setelah rempah kari tadi garing atau naik minyak, masukkan mince beef dan kentang yang dipotong kiub.
5. Biarkan sehingga kering.
6.Setelah sejuk, bolehlah dilipat kedalam pastry tadi
7. Bakar pada suhu 190 darjah celcius sehingga pastry tadi kekuning kuningan ( approximately 30-45 minutes)
8. Sebelum dibakar, sapukan kuning telur diatas kulit pastry tadi
 The filling can be substitute with sardine or sausage.

FRESH BASIL

LASAGNE



250 gm lasagne sheets
300 gm mozarella cheese, grated

White Sauce
2 tbs butter
2 tbs flour
500 ml fresh milk
a slice of onion
2 to 3 cm piece of carrot, sliced thinly
1 bay leaf
1 sprig fresh parsley
8-10 black peppercorns

Meat Sauce
1 Bombay onion - finely chopped
2 cloves garlic - finely chopped
1 stick celery - finely chopped
75gm carrot - finely chopped
4 tomatoes - skinned and chopped
400 gm mince beef
1 bay leaf
1 tbs dried oregano
dash of dried basil or 1/4 cup fresh basil
1 tbsp tomato paste/tomato puree
salt
cooking oil
dash of grated black and white pepper

Method
1. Combine and cook all ingredients for the white sauce in a saucepan.Bring to a low simmer for a few minutes.
2. Remove the saucepan, cover and leave aside for 10 to 15 minutes to infuse the milk with the flavours, then strain and discard the unwanted ingredients.
3. Melt butter over a low heat and add in the flour.Keep stirring and cook for 40 seconds to a minute
4. Pour in the flavoured milk and stir continuously for five minutes until a smooth sauce is formed.Put aside.
5.Heat oil in a saucepan and fry onion and garlic until brown. Then add in celery and carrot and fry it until soft.Stir in minced beef and cook until brown.
6. Add tomatoes and herbs and continue to cook for 15 to 20 minutes.Stir in tomato paste and seasoning.Simmer gently until sauce turns thick.
7.To make the lasagna, first spread a layer of meat sauce on the base of a baking dish. Add two to three tbs of white sauce.Sprinkle two tbs of grated mozarella cheese over the layer of sauce.
8. Arrange a lasagna sheet over the layer of cheese.Repeat the layering process untill all the ingredients are used up.Finish with a layer of meat sauce, white sauce and mozarella cheese.
9.Bake lasagne in a preheated oven at 190 or 200 degrees for 45 to 50 minutes or until the top layer turns golden brown

Note : You can add cheddar cheese in the white sauce. As for me I am using grated mozarella and cheddar cheese.

AYAM MASAK SERAI


1 ekor ayam dipotong kecil ( ayam dipotong kecil supaya rasa serai dapat meresap kedalamnya )
6 batang serai dititik sehingga pecah bawahnya ( sekiranya tidak pecah, rasa serai kurang dan lambat kering )
2 keping asam gelugor
garam 
kunyit

Bahan untuk dikisar
1 labu bawang besar
4 ulas bawang putih
20 tangkai lada kering

Cara
1. Ayam dilumur dgn garam dan kunyit dan di goreng separuh masak
2. Angkat ayam dan toskan minyaknya
3. Tumis bahan bahan yang telah dimesin sehingga garing
4. Masukkan ayam yang telah digoreng separuh masak tadi bersama asam gelugor dan serai dan digoreng lagi sehingga serai kering.

SOTONG GORENG TOMYAM


500 gm sotong - bersihkan, potong dan gorengkan sedikit
3 biji kentang - gorengkan
3 helai daun limau purut - koyakkan
3 tangkai cili besar
3 tangkai serai - ketukkan
1 labu bawang besar - hiris
1/2 cawan air asam jawa
5 tangkai daun ketumbar
2 biji buah tomato - belah 4
minyak garam

Bahan Tumbuk
5 biji cili api
5 biji cili merah
3 ulas bawang merah
3 ulas bawang putih

Cara
1. Panaskan minyak dan tumiskan bahan tumbuk sehingga wangi
2. Setelah bahan tumis garing, masukkan sotong.Gaul rata. Guna api perlahan
3. Masukkan daun limau purut, serai, bawang besar dan semua bahan di atas.
4. Masukkan air asam
5. Bila telah kering, masukkan kentang yang telah digoreng.Gaul rata.
6. Angkat dan hiaskan dgn daun ketumbar

DAGING GORENG


500 gm daging
100 gm kacang panjang
1 cawan air
3 sb cili sos
2 sb kicap
1 labu bawang besar
3 tangkai cili merah
minyak
garam

Bahan hiris
5 ulas bawang merah 
3 ulas bawang putih 
3 ulas halia

1. Tumis bahan hiris sehingga wangi
2. Setelah wangi, masukkan daging dgn air. Kacau dan biarkan daging lembut dan empuk
3. Setelah daging empuk, masukkan sos cili dan kicap
4. Kacau rata kemudian masukkan kacang panjang, cili hidup dan bawang besar 
5. Masukkan garam
6. Kalau nak pedas, boleh tambah cili padi yang dibelah dua.

HOME MADE CONEY DOG


This is my home made coney dog. Well... of course the taste definitely is not the same with the famous A&W Coney Dog but we will make do with it as the A&W is not available here and if there is one, definitely we cannot eat it as it is not halal. Anyway hubby loves it and it all matters.

250gm mince beef/chicken
1 ulas bawang putih - chopped
2 biji bawang besar - chopped
2 biji tomato - chopped
1 sudu besar lada hitam
1/2 cawan sos cili
1/2 cawan sos tomato
1 sudu besar rempah kari - optional
oregano
parsley - optional
garam

CHICK PEA


My hubby loves to eat hummous with bread and this is the first thing that he learns to make when he first came here. Hummous is a dipping made from chick pea and other spices and I think it is a Middle Eastern food because we usually had it at Arab Restaurant. It tastes good and I will definitely post it when we make one. Today I just feel like eating boiled chick pea. My late mother use to boil the chickpea and serve it as a snack. During that time, we never had chips or fries or Nachos or Kettle Chips at home. It is too expensive for us to buy. This is the first time I make boiled chickpea and it taste yummy....

RENDANG NYONYA


500 gm ayam
15 ulas bawang merah - kisar
5 ulas bawang putih - kisar
8 tangkai cili padi - kisar
2 cm halia - kisar
3 cm lengkuas - kisar
2 cm kunyit hidup - kisar
250 ml santan
2 batang serai - hiris halus
1 helai daun kunyit
sedikit minyak untuk menumis
garam

1. Ayam dibasuh dan tuskan
2. Panaskan kuali dan tumiskan bawang merah dan bawang putih hingga naik bau.
3. Kemudian campurkan halia, lengkuas dan kunyit yang telah dikisar. Kacau seketika.
4. Tuangkan santan dan masukkan ayam.
5.Kemudian masukkan garam secukup rasa
6. Akhir sekali masukkan kunyit dan serai yang telah dihiris halus.Kacau hingga ayam masak dan kuah menjadi pekat.

PASTA SEAFOOD OLIO




Olive oil
3 st bawang putih - chopped
cili api/cili hidup ( jika suka pedas ) - chopped
1 sb oregano
1 sb oyster sauce
1 sk chili flake
100 gm sun dried tomatoes
1/4 cup chopped parsley
1/2 sk lada hitam
garam
mussels/udang/sotong

1. Panaskan olive oil
2. Tumis bawang putih dan cili api/cili hidup hingga naik bau
3. Setelah naik bau, masukkan udang/sotong/mussels.
4. Setelah udang/sotong masak, masukkan sphagetti yang telah direbus
5. Masukkan oregano, oyster sauce, garam, chili flake, parsley, sun dried tomatoes, lada hitam
6. Sedap dimakan bersama garlic bread

HELLO WORLD

My first blog was created in September 2006 and it was named JOM MAKAN using the url http://hishamnor.blogspot.com. I've been neglected the blog until now when suddenly I had an urge to start blogging again and looking back at my old blog bring me down to memory lane. Unfortunately I've totally forgot my password and username and after few attempts and not to mention contacting the support group, I still can't access to that blog and updated it again.

I did not want that to deter my motivation to continue with blogging, so I've decided to create a new blog and hopefully this blog will continue together with my passion for food and cooking...BON APPETIT
