SPICY FRY AUBERGINE


Ingredients :
1 Aubergines
1 tsp chilli powder
1 tsp curry powder
1 tsp ground fennel
1 tsp salt
1 tbsp white rice flour
1 tbsp corn flour

Method :
1. Split the aubergines into lengthwise and cut into 1 inch lengths and 1/4 inch thick.
2. Season aubergines with the rest of the ingredients
3. Heat enough oil in a pan and fry the aubergines until golden brown.

STIR FRY ASPARAGUS


Ingredients:
2 cloves garlic - chopped
2 red chillies - chopped
1 tbsp oyster sauce
asparagus - cut into penne shaped sizes

Method:
1. Saute garlic and chillies in hot oil. Fry until fragrant.
2. Add asparagus.
3. Add oyster sauce and salt according to taste
4. Stir fry well and serve hot.

JAPANESE BEANCURD


Ingredients:
2 tube of silken tofu
1 onion - wedged
2 cloves garlic - minced
6 fresh button mushroom - sliced
1 red capsicum - cut into stripe
2 stalks spring onion
1 carrot sliced

For Sauce:
4 tbsp oyster sauce
1 tbsp light soya sauce
1 tbsp sesame oil
1 tbsp blackpepper sauce ( I don't put this )
1 tsp pepper
1 tsp sugar
1/2 cup water
cornstarch solution

Method:
1. Heat oil in pan and fry tofu until brown.
2. Drain well and set aside
3. Heat 3 tbsp oil in wok
4. Saute onion and garlic until fragrant.
5. Add mushroom, capsicum and carrot.
6. Stir fry for few minutes or until carrot is tender.
7. Add sauce and cornstarch solution ( depends on how thick you would like your sauce to be )
8. Stir fry well.
9. Arrange tofu on plate and pour gravy.
10. Garnish with spring onion.

STIR FRY AUBERGINES & GREEN BEAN WITH SWEET SAUCE



Ingredients:
1 aubergines
handful of green bean
white rice flour
4 tbsp sweet chili sauce
1 tsp chili paste
1 tbsp oyster sauce
1 tbsp light soya sayce
1 onion - sliced
1 cloves garlic - sliced

Method:
1. Cut green bean to 5cm length
2. Cut aubergines into rectangle shape ( 5 cm length ) or whatever shape that you desired. 
3. Coat green bean and aubergines with white rice flour.
4. Deep fry  green bean and aubergines in hot oil until golden brown and crispy.
5. Drain well and set aside.
6. Heat 2 tbsp oil in frying pan.
7. Add onion and garlic and fry until fragrant.
8. Add chili paste and cook for 2 -3 minutes.
9. Add sweet chili sauce, oyster sauce and light soya sauce. Stir fry well.
10. Pour sauce over the aubergines and green bean.
11. Serve hot.

SAVOY CABBAGE WITH SWEET SOYA SAUCE



Ingredients:
8 large Savoy Cabbage leaves
1 onion
3 cloves garlic
2 shitake mushroom
1 tbsp oyster sauce
1/2 cup sweet soya sauce
water

Method:
1. Boil water in pot.
2. Add salt and 1 tbsp oil in the pot.
3. Add the cabbage leaves and cook until the cabbage is tender. Drain.
4. Open out the blanched cabbage leaves and cut out the hard core.
5. Fold over and wrap into a parcel.Arrange in a plate.
6. Heat oil in frying pan. 
7. Saute garlic, onion and mushroom until fragrant.
8. Add oyster sauce and sweet soya sauce.
9. Simmer over low heat for 2 minutes. 
10. Pour the sauce over the cabbage leaves.

STIR FRY LEEKS WITH TOFU



Ingredients
2 medium leeks - sliced
2 red chilies - sliced
2 firm tofu - sliced
3 cloves garlic - chopped
150gm prawns - shelled ( substitute with dried shitake mushroom)
1 tbsp oyster sauce
2 tsp light soya sauce ( substitute with dark soya sauce )
1/2 tsp ground white pepper
1 tsp cornstarch( mix with 4tbsp water )
2 tbsp oil

Method
1. Heat oil in frying pan. Saute the firm tofu until brown. Set aside.
2. Using the same oil , add garlic and saute until fragrant. 
3. Add shitake mushrooms, red chilies, oyster sauce and dark soya sauce.
4. Add leeks. Mix in tofu. 
5. Add cornstarch mixture, ground white pepper and salt.
6. Mix well and cook for 2 - 3 minutes.
7. Dish out and serve immediately


Note: The above is the original recipe from seasaltwith food. I have made some modifications on the recipe based on the things that are available in my kitchen. As such, I have substitute the prawn with dried shitake mushroom which I have soaked in water until soft and sliced the mushroom thinly. I think it would be nice to use prawns but prawns is very expensive here and it is not the same type that I could get back home. The type of prawns that I had here is called langoustine. Langoustine are a member of lobster family. I don't really like it because they don't really have much meat.  I have also substitute light soya sauce with dark soya sauce. To my understanding, light soya sauce usually has a lighter color and a saltier flavor than the dark soya sauce. Dark soya sauce is often used for dishes that need the rich color and light soya sauce is for taste. However the one that I have here looks exactly the same. I could not tell the difference between light and dark soya sauce because both are lighter in color and saltier flavor.

POTATO CROQUETTES


Ingredients:
2 cup of minced beef
1 cup breadcrumb
1 egg yolk
1 onion - chopped
2 cloves garlic - chopped
1 tbsp worcestershire sauce
2 stalks spring onion - chopped
2 cup potato - boiled until tender and mashed

Method :
1. Combine all ingredients.
2. Add salt and pepper to taste
3. Shape into small round croquettes.
4.Fry in deep hot oil until brown.
5. Drain on kitchen towel.

GREEN BEAN WITH CHESTNUT MUSHROOM


Ingredients
1/2 onion - sliced
2 cloves garlic - sliced
5 chestnut mushroom - sliced
handful of green been - cut into 2 cm length

Method
1. Heat 2 tbsp oil in frying pan
2. Saute onion and garlic until fragrant.
3. Add mushroom 
4. Add greenbean and seasoning and cook until greenbean tender.
5. Dish out

PAJERI NENAS (PINEAPPLE IN SWEET CURRY SAUCE)


Ingredients
1 fresh pineapple
3 cups thick coconut milk
1 inch ginger
1 1/2 onion
2 cloves garlic
1 tbsp dried shrimp
1 inch cinnamon stick
6 tbsp fish curry powder - mix with water to create a paste
4 tbsp oil
2 tbsp sugar
2 tbsp coconut paste ( kerisek )

Method.
1. Blend ginger, onion, garlic and dried shrimp until smooth.
2. Heat oil in pot.
3. Fry blended ingredients until aromatic.
4. Add paste curry powder and cinnamon stick. Fry until oil rises to the top
5. Add coconut milk and coconut paste.
6. Add sugar and salt.
7. Add pinepapple and cook until pineapple softens and curry is thickens.

SUN DRIED TOMATOES


The above is my home made sun dried tomatoes. But I guess it is more to sun burnt tomatoes because it is supposed to be cook in the oven at the lowest temperature for about 6 hours . Due to a certain reason and mainly concern the usage of the electricity , I have increased the temperature to 400 - 500 degrees and bake the tomatoes for 1 hour. And I also forgot to sprinkle the salt.

CURLY KALE MASAK LEMAK



This is curly kale. 

2 sudu teh udang kering - kisar sederhana halus
1/2 biji bawang besar - hiris
2 cawan santan
1 sudu teh serbuk kunyit
curly kale
tahu - potong kiub dan goreng 

Cara
1. Satukan udang kering, bawang besar, serbuk kunyit, santan dan curly kale dalam periuk.
2. Biarkan hingga mendidih.
3. Bubuh garam
4. Kepekatan kuah ikut citarasa masing2.
5. Setelah mendidih, tutup api dan letak tahu yang telah digoreng.

KACANG PANJANG GORENG JAWA


1/2 biji bawang besar
3 ulas bawang putih
1 cm halia
1 sb cili kisar
1/4 cawan santan
sedikit udang kering
kacang panjang - potong serong
tahu - potong kiub dan goreng
suun
kulit tahu
1 batang lada hidup - hiris halus
Cara
1. Kisar bawang besar, bawang putih , halia dan udang kering
2. Tumis bahan kisar bersama dengan cili kisar hingga garing
3. Setelah garing dan naik bau, masukkan suun, lada hidup dan kulit tahu
4. Gaul hingga rata.
5. Masukkan santan. Bubuh garam. Gual hingga rata.
6. Masukkan kacang panjang, dan tahu yg telah digoreng.
7. Gaul hingga rata. Biarkan sebentar atas api.
8. Sedia dihidang

SUP TAHU JEPUN


2 bungkus tahu jepun/silken tofu( bergantung ikut suka nak goreng atau tidak)
1 batang lada merah
1 cm halia
2 ulas bawang putih
1 batang carrot
kobis cina
3 keping shitake kering - rendam dalam air, hiris halus
1 biji telur
tepung jagung
serbuk lada putih

Cara
1. Tumis bawang putih dan halia yang dipotong halus
2. Masukkan lada merah yang dihiris dan shitake mushroom.
3. Setelah naik bau dan garing sedikit, masukkan 2 cawan air.
4. Masukkan 1/2 kiub pati ayam
5. Masukkan sayur sayuran yang telah dipotong dan biarkan sehingga mendidih.
6. Setelah mendidih, masukkan telur yang telah dipukul. Kacau rata.
7. Masukkan garam, serbuk lada putih dan sedikit tepung jagung.
8. Akhir sekali masukkan tahu. Biarkan sebentar atas api selama 2 minit.
9. Sedia untuk dihidang

EDAMAME


Edamame is a green vegetable more commonly known as a soybean. The word Edamame means " beans on branches ". It is our favourite snack and healthy definitely. We had our first Edamame at Sushi King but mind you, it is damn too expensive for a very small bowl. We found the frozen Edamame at Isetan Supermarket, KLCC and at a very reasonable price, since then we just bought at the supermarket and cook it ourselves. 

Few months ago, we were told that there was a new Asian Shop selling all dry foods from Asian Country. It was called Malay Mama and owned by a Chinese couple from Malaysia. It was there that I found Edamame at a very cheap price. Since then, it is a must for us to go to this shop to buy my favorite snack.

PARSNIP

I am not sure what it is call in Bahasa Malaysia. I have never cook parsnip before and at first we thought it is lobak putih or sengkuang and I wonder if it would be nice if  I cook it as a filling for my spring rolls so we bought the parsnip and try to fry it like chips. It taste something like sweet potato. I don't really likes the tastes but hubby loves it. Anyhow, I am quite choosy when it comes to vegetables because since small I don't really like to eat vegetable only after I got married, then only I learn how to eat it and I only eat certain vegetables.

Method : Slice the parsnip into thin slices. Soak the parsnip in hot water for 30 minutes. Add 1tbs of salt into the hot water. After 30 minutes, drain it and fry it in hot oil until brown.

SAYUR GORENG KAK MIS


Kacang panjang - dihiris serong
Carrot - dihiris halis
Kentang - potong panjang macam french fries
1/2 biji Bawang besar
3 ulas bawang putih

Cara
1. Goreng kacang panjang dalam minyak panas hingga agak layu dan kekuningan.Angkat dan toskan minyak
2. Goreng carrot dalam minyak panas hingga agak layu dan kekuningan. Angkat dan toskan minyak
3. Goreng kentang dalam minyak panas hingga kekuningan. Angkat dan toskan minya
4. Tumiskan bawang besar dan bawang putih yang telah dihiris.
5. Setelah naik bau, masukkan kacang panjang, carrot dan kentang yang telah digoreng tadi. 
6. Letak garam. Gaul rata.Sedia dihidang

Note: I have got this recipe from my dear friend Kak Mis. She taught me how to cook this and it is very nice and it taste different compared to the one that I used to make whereby I just dump everything together don't fry the long beans and carrot first.

TERUNG GORENG BERCILI


1/2 biji bawang besar
2 ulas bawang putih
2 sudu besar udang kering
3 -4 ulas cili merah 
1 sudu besar cili mesin

Cara
1. Kisar bawang besar, bawang putih , udang kering dan cili hidup 
2. Terung dihiris dalam 0.5 cm. Goreng terung dalam minyak panas sehingga kekuningan
3. Angkat terung yang telah di goreng, toskan minyaknya
4. Tumis bahan kisar sehingga garing 
5. Letak garam dan akhir sekali masukkan terung dan gaul hingga rata
6. Sedia dihidang
