SIZZLING YEE MEE


Ingredients:
5 cloves garlic ( minced )
5 pcs dried shitake mushroom ( soaked in water until tender, sliced)
3 pcs dried chillies ( seeded and halved)
4 pcs chicken meat ( cut into small pieces )
1/2 inch ginger ( sliced )
carrot ( sliced )
capsicum ( sliced )

Sauce ( combine):
2 tbsp oyster sauce
3 tbsp light soy sauce
1 tbsp thick soy sauce
ground black pepper

salt
1 tsp sesame oil
1 tbsp cornflour ( combine with 1 tbsp water)

Method:
1. Heat oil in a wok.
2. Saute garlic, dried chillies and ginger until fragrant.
3. Add chicken, carrot and capsicum.
4. Stir fry until carrot is tender.
5. Add 2 cups of water.
6. Add in the combine sauce.
7. Add shitake mushroom.
8. Stir fry briskly, then add thickening.
9. Sprinkle with a dash of sesame oil.
10. Add salt and ground black pepper according to taste.
11. Serve with noodle.

Note: I used wonton noodle instead of yee mee and I definitely do not use the hot plate because I don't have one. Serve the noodle with pickled green chillies.

MEE SOTO / NOODLE SOTO



Ingredients:
chicken carcass
3 tbsp soto powder
2500 ml water

Spices (A)
1 cinnamon stick
1 star anise
2 cardamom
4 cloves
2 stalks lemon grass (crushed)

Blended Ingredients (B)
1 onion
1 inch ginger
3 cloves garlic
1 tsp whole black pepper
2 candlenuts ( buah keras )

Condiments
Bean Sprouts
Vermicelli Rice
Shredded Chicken Meat - Fry the chicken with turmeric and salt before shredding the meat.
Spring Onion
Potato Croquette
Hot Soy Sauce

Method:
1. Heat oil in cooking pot.
2. Saute spice(A) until fragrants.
3. Add blended ingredients and cook until oil rises to the top.
4. Add water and chicken carcass.
5. Add soto powder.
6. Lower the heat and cook for 20 - 30 minutes.
7. Add seasoning to taste.
8. To serve: Put enough noodles in a soup bowl. Add some bean sprouts, spring onion, shredded chicken meat, potato croquette and hot soy sauce. Add soup stock.

CURRY NOODLE (2)

                                             Hers
                                             His
                                            Garnishing

Ingredients:
500 gm sphagetti
1 onion - blended until fine
3 cloves garlic - blended until fine
3 tbsp meat curry powder - mix with water to make into paste
2 tbsp chili paste
250 ml coconut milk
650 ml water
5 pieces chicken - cut into small pieces
tofu
fishball

Garnishing
green bean - soaked in hot water until tender
hard boiled egg
fresh green chillies/ red chillies
limes
spring onion

Method:
1. Heat oil in pot.
2. Saute blended onion and garlic until fragrant.
3. Add meat curry powder and chili paste and cook until oil rises to the top.
4. Add chicken, fishball and tofu.
5. Stir until all ingredients are well combined.
6. Add coconut milk.
7. Add water and allow to simmer for 15 minutes.
8. Add salt to taste.
9. To serve: Put enough noodles in a soup bowl. Add the curry soup and garnish before serving.

BAKSO




Ingredients:
1 onion
4 -5 cloves garlic
2 cm ginger
1 thumb size galangal - crushed
1 stalk lemon grass - crushed
1 tsp ground black pepper
1/2 tsp ground white pepper
2 cloves
2 cardamom
1 cinnamon stick
1/2 cube of beef stock
salt
meatball
carrot - sliced
celery stalk - sliced
chinese cabbage

Method:
1. Blend garlic, onion and ginger until fine
2. Heat 3 tbsp oil in a pot.
3. Saute blended ingredients until fragrant. 
4. Add cloves, cardamom and cinnamon stick.
5. Add lemon grass and galangal and continue to cook until oil rises to the top.
6. Add 2 litre of water.
7. Add ground black pepper, white pepper and cube of beef stock.
8. Add salt to taste.
9. Add meatball, carrot, chinese cabbage and celery stalk and continue to cook until all the vegetables are soft and meatballs are cook.

Meat Ball
Ingredients:
600 gm minced beef
3 tbsp cornflour
1/2 tbsp white pepper
1 tbsp ground coriander
1 tsp ground fennel
1 tsp ground cumin
2 sliced of ginger - pound until fine
4 cloves garlic - pound until fine
1 egg

Method
1. Mix all ingredients together with minced beef .
2. Shaped the meatball into small rounds.

Note: Bakso is the Indonesian most popular meat ball soup. It is served with rice noodles and a dash of hot chili soy sauce.

SPICY CHOW MEIN



Ingredients
1/2 onion - sliced
3 cloves garlic - chopped
a handful of bean sprouts
1 egg
3 tbsp chili paste
1 tbsp tomato sauce
1 tbsp chili sauce
1 tbsp thick soy sauce
4 pieces of chicken - cut into small pieces
1 packet of chow mein

Method
1. Soak the chow mein in boiling hot water for 4 minutes or until chow mein soft
2. Heat up oil and stir fry garlic and onions until fragrant
3. Add chili paste and stir fry until oil rises to the top
4. Add chicken and stir fry until chicken is cook
5. Add tomato sauce, chili sauce and thick soy sauce.
6. Add bean sprouts and cook for 2 minutes
7. Add egg and continue to stir for 1 minutes
8. Add chow mein and continue to stir until the chow mein is evenly coated with sauce
9. Add salt to taste and ready to serve.

BLACKPEPPER UDON NOODLES


3 bungkus mee udon - rebus dengan sedikit minyak hingga lembut
1/2 batang carrot - hiris halus
2 helai daun kobis cina - potong halus
3 keping cendawan kering ( dried shitake)- rendam hingga lembut dan hiris
3 ketul ayam - potong kecil

Bahan Sos
2 sm oyster sauce
1 sm sesame oil
3 sm kicap manis

Bahan Kisar
3 sb cili kisar
1 bij bawang besar
3 ulas bawang putih
2 cm halia
2 sm biji lada hitam

Cara
1. Tumis bahan kisar hingga naik bau dan garing. Masukkan lada hitam. Kacau lagi.
2. Masukkan sedikit garam, sos tiram, kicap manis & minyak bijan. Kacau lagi
3. Masukkan lobak merah, kobis cina dan ayam. Biarkan atas api hingga ayam masak dan sayur lembut.
4. Masukkan dried shitake. Gaul lahi hingga rata.
5. Masukkan udon. Kacau hingga rata dan sedia dihidang

BEE HOON SOUP FISH BALL


2 ulas bawang putih - cincang hingga halus
segenggam kecil ikan bilis - cincang hingga halus
chicken kiub
beehoon
fishball
carrot/chinese cabbage
setangkai sawi asin jeruk - cincang halus

Cara
1. Tumis bawang putih dan ikan bilis dalam minyak panas ( letakkan sedikit minyak bijan )
2. Setelah naik bau, masukkan 3 cawan air
3. Masukkan garam,sawi asin jeruk, kiub ayam, fishball dan sayur-sayuran
4. Biarkan mendidih dan sedia dihidang bersama bee hoo yang telah dicelur dgn air panas.

MEE KARI


Bahan Kisar
1 biji bawang besar
3 ulas bawang putih
2 cm halia
1 batang serai

2 sudu besar rempah kari daging - digaul dgn air sehingga jadi pes
1 sudu besar cili mesin
1/2 tin santan
ayam 
fishball
tahu
limau nipis
cili hijau
daun bawang


Cara
1. Tumiskan bahan kisar sehingga garing
2. Masukkan rempah kari daging dan cili mesin. Gaul rata dan biarkan sehingga garing
3. Setelah garing, masukkan ketulan ayam atau daging. Terpulang.Jika suka boleh juga gunakan udang.
4. Biarkan sebentar.Masukkan santan.Gaul dan kemudian masukkan air. Sukatan air bergantung kepada kepekatan kuah yang disukai.
5. Akhir sekali masukkan fishball dan garam.
6. Biarkan sehingga mendidih, baru tutup api.
7. Mee kari ini boleh dimakan dengan telur rebus dan tahu goreng.
8. Jika suka boleh juga dihiaskan dengan bawang goreng, cili hijau potong, daun bawang dan limau nipis.

KUEY TIAW SUP

3 ulas bawang putih - cincang
5 batang cili padi - cincang
1 sudu besar minyak bijan
1/2 kiub stok ayam
fishball
ayam
daging
1 sudu teh lada hitam
lada putih

1. Tumis bawang putih dan cili padi dalam minyak yang telah dipanaskan ( minyak bijan & minyak masak )
2. Setelah garing, masukkan ayam dan daging. Gaul sehingga rata. 
3. Masukkan lada hitam. Gaul lagi sehingga rata.
4. Masukkan air secukup rasa. Bergantung ikut banyak kuey tiaw.
5. Biarkan sehingga daging dan ayam empuk
6. Masukkan kiub ayam dan lada putih secukup rasa
7. Masukkan fishball dan biarkan sehingga mendidih
8. Jika suka boleh lah dimasukkan sayur sayuran seperti sawi atau chinese leaf.
9. Bolehlah dihidangkan dgn daun bawang
10. Jika suka kueytiaw sup ini sedap dimakan dgn cili jeruk dan perahan limau.
